Nestled along a quiet road outside Ellsworth, Boettcher's Maple Syrup sits amid some of the best sugar maple country in the state. The here isn't just a location — it's the foundation of everything we do.
Our syrup is made the traditional way: sap is collected from mature sugar maples, transported to the sugar shack, and slowly boiled down over an open flame. The result is a rich, complex syrup with flavors that can't be replicated in a factory. Each batch carries the distinct character of our forest — the soil, the climate, the season.

From Tree to Bottle — Every Step Matters
There's no substitute for the traditional method. Here's how we make our syrup, the way it's always been done.
Tap the Maples
When winter gives way to spring and the nights stay below freezing while days warm above, we tap our sugar maples and begin the collection.
Collect the Sap
Clear, watery sap flows from each tree and is gathered in bags or tubing. It takes roughly 40 gallons of sap to produce just one gallon of syrup.
Boil It Down
The sap is transported to the sugar shack and boiled in open pans over an open flame. The steam rises, the sap reduces, and the flavor concentrates.
Bottle & Share
The finished syrup is carefully filtered, graded, and bottled while still warm. Every batch is tasted and approved before it leaves the sugarbush.
